Four Seasons Lodge Serengeti is seeking an experienced and results-driven Outlets Manager (Department Head) to oversee all Food and Beverage outlet operations. The successful candidate will be responsible for ensuring outstanding guest satisfaction, maximizing financial performance, maintaining operational excellence, and leading high-performing teams while upholding the luxury standards associated with the Four Seasons brand.

Responsibilities

  • Ensure all food and beverage outlets operate in accordance with Four Seasons service philosophy and Serengeti positioning standards.
  • Drive personalized, intuitive, and anticipatory guest service experiences.
  • Review and monitor guest feedback from various platforms including Qualtrics, LQA, TripAdvisor, Google Reviews, and direct guest comments.
  • Lead immediate service recovery actions whenever guest concerns arise.
  • Maintain a strong operational presence during peak service periods.
  • Manage outlet profit and loss (P&L) performance.
  • Monitor food and beverage cost percentages and implement cost-control measures.
  • Promote an upselling culture focused on premium wines, signature cocktails, and special dining experiences.
  • Ensure accurate revenue posting through Micros and Opera systems.
  • Support budgeting, forecasting, and revenue planning processes.
  • Lead and supervise Managers, Assistant Managers, Supervisors, and Captains.
  • Conduct daily team briefings and weekly operational meetings.
  • Ensure implementation of the 5-10-5 training plan.
  • Drive employee recognition initiatives, including Employee of the Month programs.
  • Conduct performance reviews, coaching sessions, and staff development activities.
  • Ensure compliance with Standard Operating Procedures (SOPs) across all outlets.
  • Monitor cleanliness, maintenance standards, and table setup presentation.
  • Oversee beverage inventory management and cost control measures.
  • Ensure effective coordination between Kitchen, Stewarding, and Service departments.
  • Enforce HACCP food safety and hygiene standards.
  • Serve as the Environmental, Health, and Compliance (EHC) Champion for Food and Beverage Service operations.
  • Ensure responsible alcohol service practices.
  • Monitor employee grooming, appearance, and uniform standards.

Qualifications

  • Two to three years of previous experience in a managerial Food and Beverage position.
  • Strong leadership and team management skills.
  • Excellent decision-making and problem-solving abilities.
  • Strong financial management and business acumen.
  • Excellent guest engagement and customer service skills.
  • Ability to manage crises and resolve operational challenges effectively.
  • Advanced knowledge of wines, beverages, and luxury dining service standards.
  • Proficiency in Micros and Opera systems.
  • Excellent verbal and written communication skills in English.
  • Strong organizational and multitasking abilities.
  • Ability to work effectively in a fast-paced luxury hospitality environment.
  • Experience in maintaining service excellence and operational quality standards.
