Cost Controller

Johari Rotana in Dar es Salaam is seeking a Cost Controller to join its Finance team. This role is particularly important in controlling Food & Beverage costs and ensuring that hotel operations remain financially efficient and profitable.

The position works closely with the Executive Chef, Food & Beverage teams, stores, receiving, and other operational departments. The successful candidate will monitor food costs, verify inventory, check receiving procedures, analyze banquet profitability, and ensure that hotel resources are properly controlled.

Key Responsibilities

• Prepare recipe and menu costing based on information provided by the Executive Chef.

• Recommend appropriate selling prices for food and beverage items based on cost calculations.

  

• Conduct test checks on goods received by the hotel to ensure established receiving procedures are followed.

• Prepare daily food-cost flash reports for management review.

• Verify daily outlet void-control sheets and investigate discrepancies where necessary.

• Attend major banquet events with open bars and monitor related costs and revenues.

• Prepare profit and loss statements for major banquet events.

• Prepare revenue breakdown summaries for banquet functions.

• Conduct random inventory checks across Food & Beverage outlets.

• Reconcile opening and closing stock while considering store issues and sales.

• Verify and control complimentary bar order forms.

• Monitor Food & Beverage costs associated with Club Rotana.

• Verify the cost and control of fruit baskets and other complimentary items provided to guests.

• Liaise with Food & Beverage departments regarding operational and cost-control matters.

• Support effective inventory, purchasing, receiving, and consumption controls.

• Identify discrepancies and help management maintain proper cost-control procedures.
